With this Swantide Workflow, you can create a Validation Rule on Opportunities to Lock Down updates being made to a field(s) by a certain User Profile.
If you are using the following Swantide Workflow, "Assign Rep on Opportunity Creation (Custom Created by Field)" this Validation Rule would be important to enable so that only System Admins can update the Custom Created by Lookup field on Opportunities.
